This is another one of my product of curiosity: a loaf made of cooked rice.
Recipe: Savory rice pudding
Ingredients:
- 2 cup cooked brown rice and white rice mixture (Ratio of brown:white = 2:1), left overnight
- 1/2 cup glutinous rice flour
- 1 TB vital gluten powder
- 1 TB baking powder
- 2 TB dried shrimps
- 2 slices of cooked bacon
- about 1/2 cup water
Procedure:
1. Mix rice flour, gluten, baking powder together thoroughly. Add to rices. Add shrimps and bacon. Mix well.
2. Add water and mix to form a loaf.
3. Bake at 350F for 35-40 minutes.

Observations:
1. The proportion of rice is very high compared with the proportion of flour.
2. Perhaps because of the lack of flour, the baking powder generates a lot of bubbles that are not captured inside the loaf. Instead, these bubbles stay on the surface.
