Pan sizes

8.5"x4.25" pan: for 2.5-3 cups flour + 1 cup water, yielding a loaf of about 1 pound
9"x5" pan: for 3.5-4 cups flour
10"x5" pan: for 4.5 cups flour + 1.5 cups water, yielding a loaf of 1.5 pound

Flat-topped bread: slack dough, not each flour
